The basement of the home is where all of the meat roasting for the catering business took place. There were two large gas stoves available for that purpose. Hundreds of pounds of potatoes were peeled by hand, each week, in this area. In another section of the basement many bushels of clams were scrubbed on a weekly basis. Dirty dishes from banquets were washed here. Relative to current food preparation health regulations this photograph is shocking. Yet, there were never any complaints relative to the ingestion of foods prepared here. |
